Ingredients

4 serv.
  • butter50g g
  • strong white bread flour300g g
  • packet of dry yeast7g g
  • granulated sugar1 tbsp tbsp
  • butter

    for bowl and tray

  • butter100g g
  • garlic clove1

    minced

  • vegetable slices

and smoked meat, for serving (optional)

Step-by-step instructions

  1. 1

Heat 175 ml of water in a saucepan until steaming, then add the butter and set aside to cool to a warm, but not hot, temperature. In a large bowl or mixer combine the flour, yeast, sugar and 1 tsp salt. Add the cooled water and knead a soft dough. Knead for 10 minutes by hand or 5 minutes in a mixer until the dough becomes elastic and smooth. Return to a clean, oiled bowl and cover with oil‑filled film. Let rise in a warm place for 1½‑2 hours, or until the volume has doubled.

  2. 2

Oil the baking tray. Deflate the dough and knead again for a few minutes. Take a small piece of dough (about the size of a nut) and shape it into a ball. Place the ball on the tray and repeat with the remaining dough, leaving about ½ cm of space between balls. Cover and let rise for 30 minutes. Meanwhile, to make garlic butter, melt butter in a pan, add the garlic and stir. Season.

  3. 3

Preheat the oven to 180 °C/160 °C with convection/gas 4. The dough balls are almost touching each other. Bake for 25‑30 minutes until they are cooked through. Brush them with a little garlic butter and let cool for 5 minutes. Serve with the remaining garlic butter and an assortment of vegetable slices and smoked meat, if desired.
