Dill-Zucchini Dip

A great dip for pita chips, crackers, carrots/veggies or a spread on sandwiches.

Ingredients

6 serv.
  • medium zucchini, grated2
  • olive oil2 tablespoons
  • onions, chopped3 tablespoons
  • garlic cloves, chopped2 tablespoons
  • yogurt, plain1⁄2 cup
  • lemon juice or 2 tablespoons apple cider vinegar2 tablespoons
  • dill, dried2 tablespoons
  • both salt & pepper1⁄4 teaspoon
  • pinch red pepper flakes1

Step-by-step instructions

    Place oil, grated zucchini, garlic, onion, and red pepper flakes in pan over medium heat and cook, stirring occasionally. Remove from heat and let cool.

    Add cooled mixture into blender. To this add yogurt, lemon/vinegar, dill, salt and pepper. Puree until very smooth, scraping down the sides occasionally. Refrigerate.

    ** You can use larger zucchini as well but be sure to seed them.
