Damson Gin

Pour the taste of autumn into a bottle with our homemade damson gin. The flavor matures and improves over time. The recipe can also be used to make damson vodka.

    Wash and sort the damson plums, removing leaves and stems, then dry them, place them in a freezer bag and freeze overnight. The next day, crush the frozen damsons several times with a rolling pin and transfer everything into a 2‑liter Kilner jar or divide between two smaller jars.

    Add the sugar and gin, cover with a lid. Shake well. Every day for a week, shake the jar vigorously until all the sugar dissolves, then store it in a cool, dark place for 2‑3 months.

    Line a plastic sieve with a square of muslin (or use a coffee filter cone for a very clear gin) and strain the damson gin through it. Transfer to clean, dry bottles, seal and label. The gin is ready to drink, but will improve over time – it can be kept for over a year if you can wait.
