This plum and apple crumble will be a true delight as a family dessert. Plums contain pits, so be sure to warn people to remove them while eating.
Preheat the oven to 200 °C/180 °C convection/gas 6. Place the plums in a saucepan with the sugar, butter and plum gin if using (or a splash of water if not), and gently heat until the plums start releasing juice. Transfer to the bottom of a large shallow gratin dish (about 25 cm long) and mix with the apple slices.
Place all crumble ingredients in a food processor with a pinch of salt and pulse until the mixture just begins to form clumps. Do not over‑process, or the mixture will become too sticky. Alternatively, rub the butter into the flour by hand, then add the remaining ingredients.
Sprinkle the crumble over the plums and bake in the oven for 30‑40 minutes until golden. Let stand about 15 minutes before serving with custard or cream. Remember to warn everyone about the pits!
