Skip regular milk and replace it with coconut or hemp milk in these light pancakes, suitable for people with dairy intolerance or lactose intolerance.

Step-by-step instructions

    Place the flour in a bowl and make a well in the centre. Crack the egg into the well and pour a quarter of the milk. Use an electric or hand whisk to mix thoroughly. When a paste forms, add another quarter of the milk and, once there are no lumps, stir in the remaining milk. Let the batter rest for 20 minutes. Mix again before using.

    Heat a small non‑stick pan, adding a little oil. When hot, pour a small amount of batter onto the pan and swirl to coat the bottom – a thin layer is needed. Cook for a few minutes until the bottom is golden‑brown, then flip and cook until golden on the other side. Continue until all batter is used, stirring it between pancakes and adding more oil as needed. Stack the pancakes between sheets of parchment paper or keep warm. Serve with a topping of your choice.
