Crunchy Polenta Roasties

Coat the potatoes in olive oil and dry polenta for a crispy‑crusted roastie, perfect as a Sunday lunch side.

Ingredients

  • large potatoes9

    (about 1.25 kg), peeled and cut into large pieces

  • olive oilabout 200ml ml
  • dry polenta1-2 tbsp tbsp

Step-by-step instructions

    Preheat the oven to 200 °C/180 °C fan/gas 6. Pour enough oil into a large roasting pan and place it in the oven. Put the potatoes into a pot and cover with boiling water from the kettle. Bring to a boil and simmer for 7–8 minutes.

    Drain the potatoes, then toss them with the polenta so they dry and form a fluffy coating. Carefully place the potatoes into the hot pan, drizzle a little more oil and toss to coat.

    Roast for 30 minutes, then turn and roast another 30 minutes. Turn again and cook for another 10 minutes. You can place them on the lower rack while you prepare the side dish (e.g., our vegetable “frog in a hole”), and if needed roast for an additional 15–20 minutes.
