Combine the onions and corn starch in a bowl, mixing until the onions are evenly coated.
Heat the oil to a depth of 3 cm in a large pot or pan over medium heat until it reaches 160 °C, or until a piece of onion sizzles when you drop it in. Fry the onions in batches for 5–8 minutes, stirring regularly, until they turn golden and crispy. Transfer them to a plate lined with paper towels, using a slotted spoon to remove excess fat. Generously season with salt. Store in an airtight container for up to four days.
