What could better embody comfort food than sausages and baked beans in a pie topped with cheesy, buttery mashed potatoes? It's a guaranteed family favourite.

First, prepare the mashed potatoes. In a large pot bring salted water to a boil over medium heat, then carefully add the chopped potatoes. Cook 15‑20 minutes until soft. Drain, return to the pot and let sit for a few minutes to dry slightly before mashing. Add butter and milk, stir until smooth. Set aside, covered, to keep warm.
Preheat the oven to 200 °C/180 °C/gas 6. While the potatoes are cooking, heat the oil in a pan or pot over medium heat and sauté the onion for 6‑8 minutes until soft. Add the sausage pieces and fry for 4 minutes until browned on all sides, then add the garlic and cook 1 minute, after which stir in the smoked paprika and cook another minute. Pour in the beans and barbecue sauce and cook until the mixture almost boils, then remove from heat.
Spread the sausage and bean mixture into a baking‑suitable dish (we used 20 × 20 cm), then layer the mashed potatoes on top and sprinkle with grated cheddar. Bake in the oven for 25‑30 minutes until the edges bubble and the cheese turns golden. Remove from the oven and sprinkle with the chopped spring onion, if using.
