Cottage Cheese Cheddar Enchiladas With Taco Sauce

Ingredients

8 serv.
  • cream-style cottage cheese1 cup
  • shredded old cheddar cheese1 1⁄2 cups
  • minced fresh garlic1 -2 teaspoon
  • medium firm tomatoes, chopped2
  • green onions, chopped2
  • chili powder3 teaspoons
  • seasoning salt1 teaspoon
  • canned diced green chilies2 tablespoons

    (or to taste)

  • corn tortillas8

    (6 inch)

  • taco sauce1 cup

    (or to taste)

  • grated cheddar cheese1 cup

    (or to taste)

Step-by-step instructions

    Set oven to 350 degrees.

    Grease a 13 x 9-inch baking dish.

  3. 3

    In a bowl mix together cottage cheese, 1-1/2 cups shredded cheddar cheese, tomatoes, green onions, chili powder, seasoned salt and green chilies (if using).

    Divide the mixture between the 8 corn tortillas.

  5. 5

    Roll up the tortillas and place seasom-side down in the baking dish.

  6. 6

    Drizzle the taco sauce over the tortillas and thne sprinkle with 1 cup grated cheddar cheese (or to taste).

    Bake for 15-20 minutes or until hot and the cheese has melted.
