Try our version of coquito — a festive Puerto Rican drink. It keeps in the refrigerator for up to four days. Enjoy the leftovers, drizzled over puddings.

Ingredients

6 serv.
  • spiced rum350ml ml
  • coconut milk400ml can ml
  • coconut cream320ml ml
  • condensed milk397g can g
  • evaporated milk340g can g
  • vanilla extract1 tsp tsp
  • cinnamon stick1
  • ice

    for serving (optional)

    or cinnamon, for serving

Step-by-step instructions

    Pour the rum, coconut milk, coconut cream, condensed milk, evaporated milk and vanilla extract into a blender. Blend until smooth, then transfer to a large jug and add a cinnamon stick. Chill for at least 4‑5 hours or overnight. It will keep in the refrigerator for up to four days.

    When ready to serve, stir the coquito, then pour small portions over ice if using, and sprinkle with nutmeg or cinnamon.
