Classic Sausage with Mash

A classic family comfort dish with creamy mash and golden‑brown sausages. Fresh seasonal veg like steamed broccoli make this a 3‑out‑of‑5‑veg‑portion meal.

Ingredients

2 serv.
  • organic free‑range pork sausages12
  • organic potatoes500g г

    cut into even pieces

  • organic butter25g г

    plus extra for serving

  • organic whole milk50ml мл
  • organic carrots2

    sliced

  • organic broccoli250g г

    separated into florets

  • canned organic corn198g г

    drained

Step-by-step instructions

    Preheat the oven to 200°C/180°C convection/gas 6. Arrange the sausages on a tray and bake for 35‑40 minutes, or until they are cooked through and golden.

    Place the potatoes in a large pot of water and bring to a boil. Simmer for 20 minutes, drain and let the potatoes steam dry. Pass them through a potato ricer (if available) or mash well with a potato masher.

    Place the carrots and broccoli in a steamer over a pot of boiling water and steam for 6‑8 minutes, or until tender. Put the corn in a small saucepan with about 3 tbsp water and heat for 3‑5 minutes.

    Heat the butter and milk in a saucepan until the butter melts, then pour them over the potatoes. Whisk well to a creamy consistency, then season. Place the sausages on the mash and top with a knob of butter to melt over everything. Serve the broccoli, carrots and corn separately.
