Bake this tasty banana bread with chocolate crumbs – a great way to use ripe bananas left in the fruit bowl.
Preheat the oven to 180°C/160°C fan/gas 4. Grease a 900 g loaf pan with butter and line the bottom and sides with parchment paper.
Beat the softened butter and caster sugar with an electric whisk until light and fluffy.
Mix the egg and vanilla extract and gradually add them, stirring after each addition.
Gently fold in the flour, a pinch of salt, the leavening agent, mashed bananas and almost all the chocolate chips, leaving a handful aside.
Transfer the mixture into the prepared pan and sprinkle the remaining chocolate chips on top.
Bake for about 50 minutes, or until the bread has risen and is cooked through – a skewer inserted in the centre should come out clean. Let it cool in the pan for 10 minutes, then remove to a rack and let it cool completely. Slice before serving. Store in an airtight container for up to five days.
