This luxurious dessert, which can be made in advance, is perfect for a festive dinner or buffet, with a fragrant cream cheese filling and a base of dark chocolate biscuits.

Lightly grease and line a 20 cm removable-bottom cake tin. To make the base, place the biscuits and butter in a food processor, pulse into fine crumbs, then transfer to the tin. Spread evenly across the bottom and press firmly with the back of a spoon. Place the tin in the freezer and let set for 30 minutes.
Lay a large sheet of foil (or, if unavailable, two small sheets overlapped) on the work surface. Place the cake tin in the centre of the foil and lift the sides, forming a foil bowl around the cheesecake. Place this into a larger baking pan.
Preheat the oven to 180 °C/160 °C with convection/gas 4. To make the filling, place the eggs and yolks in a food processor and blend until smooth. Add the cream cheese, cream, sugar, orange zest and orange liqueur, process until just combined. Gently pour the filling onto the cooled base.
Add enough freshly boiled water to the baking pan so that the level rises about 2 cm up the sides. Carefully place the pan in the centre of the oven and bake for about 1 hour 15 minutes. The cheesecake is done when it is lightly browned and only slightly set.
Remove from the oven and sprinkle with grated chocolate. Cool in a water bath for 15 minutes. Lift the tin from the water and let cool further for another hour. Cover with cling film and refrigerate the cheesecake overnight before serving.
To serve, run a circular knife around the cheesecake and gently release it from the tin. Using a palette knife, transfer the cheesecake to a flat plate or stand and cut into slices.
