Chicken Frittata - Southwestern

I think this came from a Pillsbury recipe, but quick & easy enough for me.

Ingredients

4 serv.
  • green onion1⁄2 cup
  • frozen corn1⁄2 cup
  • eggs6
  • milk1⁄4 cup
  • salt1⁄4 teaspoon
  • (9 ounce) package frozen cooked chicken strips1 package
  • shredded colby-monterey jack cheese1⁄2 cup
  • thick & chunky salsa1⁄2 cup
  • butter1 tablespoon

Step-by-step instructions

    Melt butter in large skillet & sauté onions & corn over medium heat for 3-5 minutes.

    Add thawed chicken to skillet and mix.

    Spread evenly in bottom of skillet.

  4. 4

    Beat eggs, milk & salt in medium bowl.

  5. 5

    Pour egg mixture over chicken mixture.

  6. 6

    Reduce heat to medium-low, cover & cook 8-10 minutes.

  7. 7

    Cover frittata with cheese. Once melted, cut into wedges and serve with salsa.
