Cheesy French toast with ham & grilled vine tomatoes

This twist on the classic croque-monsieur is much easier to prepare for a large crowd

Ingredients

  • eggs5

    beaten

  • milk4 tbsp tbsp
  • gruyère140g g

    grated

  • chopped chives1 tbsp tbsp
  • knob of butter
  • baguette1large

    thickly sliced

  • cherry tomatoes250g g

    on the vine

  • olive oil

    for grilling

  • sliced ham250g g

    - about 25 slices (James used Serrano)

  • watercress

    to serve

Step-by-step instructions

    Heat the grill to high. In a shallow bowl, whisk together the eggs, milk, cheese and chives. Melt the butter in a large non‑stick pan over medium heat. Dip the bread slices into the egg mixture, then place them in the pan. Cook for 3‑5 minutes on each side, until golden and crisp, then keep warm in a low oven if needed.

    Place the vine tomatoes on a baking tray, drizzle with a little oil and season with salt and pepper. Grill until they begin to soften and blister. On a large platter, pile the cheesy French toast, grilled tomatoes, sliced ham and a heap of watercress, and let everyone dig in.
