An ideal side dish for grilled steak, these corn cobs with cheese and butter are lightly charred and sprinkled with parmesan (or a vegetarian alternative).
Fill a large pot with salted water and bring to a boil. Add the corn cobs and boil for 5 minutes until slightly tender, then drain. They can be prepared a day ahead – place the corn in a baking dish, cover and refrigerate until use.
Season the corn, place it on a hot grill and cook for 5 minutes, turning regularly until it begins to puff and some kernels puff up and char in places. Alternatively, heat a grill pan over high heat and grill the corn 4‑5 minutes per side for a similar effect.
Brush all sides with melted butter, then sprinkle with parmesan and a little black pepper.
