What could be a better way to use up the leftovers of your cheese board after a party than with tasty creamy macaroni “mac 'n' cheese”? Easy comfort food for a busy weekday evening

Ingredients

  • pasta350g g

    shapes

  • butter2 tbsp tbsp
  • garlic clove1

    minced

  • mustard powder1 tsp tsp
  • cayenne pepper½ tsp tsp

    (optional)

  • plain flour3 tbsp tbsp
  • milk500ml ml
  • cheese mixture250g g

    about (we used Cheddar, cheddar and Camembert), plus extra hard cheese for topping

Step-by-step instructions

    Cook the pasta according to the package instructions, drain and set aside.

    Melt the butter in a saucepan, add the garlic and cook for 1 minute until softened, then add the mustard powder and cayenne pepper and cook for another minute. Add the flour and stir to form a paste, cooking for about 1 minute until the mixture starts to bubble slightly. Remove from heat and gradually whisk in the milk, whisking after each addition to prevent the sauce from curdling. Return to the heat and cook for 5 minutes until the sauce thickens, then add the cheeses, stir until melted, and gently fold in the pasta.

    Preheat the oven to 180°C/160°C with convection/gas 4. Transfer the pasta to a baking dish, sprinkle with additional hard cheese such as cheddar or parmesan, and bake for 25‑30 minutes until golden and bubbling. Let cool for about 10 minutes, then serve.
