Ingredients

20 serv.
  • puff pastry320g g

    sheet

  • grated cheesemugful of

(we mixed 60g cheddar with 25g parmesan)

  • flour

    for dusting

  • milk2 tbsp tbsp
  • fillings of your choice

(optional) — we used poppy seeds, dried oregano and sesame seeds

Step-by-step instructions

  1. 1

Roll out the puff pastry and sprinkle most of the cheese onto one half of the sheet. Fold the pastry in half to cover the cheese and seal it.

  2. 2

Dust the rolling pin and work surface with a little flour and place the pastry sheet on it. Roll it out until it doubles in size.

  3. 3

Preheat the oven to 200°C/180°C with convection/gas 6 and line two baking trays with parchment paper.

  4. 4

Using cookie cutters, cut shapes from the dough and place them on the prepared trays. (Arrange the cutouts close together to minimize dough waste. You can gather the scraps, re‑roll them and cut out more shapes.)

  5. 5

Brush the shapes with milk, add a pinch of cheese and sprinkle with the chosen filling if using.

  6. 6

Bake for 10–12 minutes until they rise and turn golden, then transfer to a plate. Store in an airtight container for up to 3 days.
