Prepare a simple omelette for a quick and easy snack at any time of day. Use mature cheddar for maximum cheesy flavor.
Break the eggs into a bowl and whisk well with a fork. Season with a pinch of salt.
Heat the oil and butter in a medium non‑stick pan over medium‑low heat. When the butter begins to foam, pour in the eggs and tilt the pan so they coat the bottom. Using a spatula, gently pull the eggs from four points, creating folds in the centre. Do this once or twice, then let the eggs cook softly for 2‑3 minutes until a little raw egg remains in the centre. Sprinkle with cheese and, using the spatula, gently fold the omelette in half. Turn off the heat and let the residual heat of the pan melt the cheese for 1 minute. Transfer to a plate and sprinkle with black pepper before serving.
