Ice cream with bananas and peanut caramel

If your bananas are almost overripe, peel them, place them in an airtight container and freeze to make this tasty dessert, as fast as lightning.

Ingredients

2 serv.
  • granulated sugar30g g
  • roasted salted peanuts30g g
  • dark chocolate30g g

    (minimum 70% cocoa solids)

  • small ripe bananas4

    frozen

Step-by-step instructions

    Melt the sugar in a small pan over medium heat until it caramelizes. Add the peanuts, then immediately and carefully pour the caramel onto a parchment sheet with a non‑stick coating and let it cool.

    In a microwave‑safe bowl melt the dark chocolate in the microwave for 1 minute. Stir well, then set aside.

    Remove the bananas from the freezer and blend them in a food processor to an ice‑cream consistency. Cut the cooled caramel into pieces and drizzle each serving of ice cream with the melted chocolate. Yum!
