Bake a bread‑like cake using the British favourite – milk cereal – together with dried fruit. It’s egg‑free and easy to make.

Ingredients

1 serv.
  • All-Bran or Shreddies100g g

    (or use another dry cereal you have at home)

  • white sugar100g g
  • dried fruit150g g

    (currants, raisins or mixed dried fruit)

  • whole milk300ml ml
  • butter

    for the tin (optional)

  • plain flour100g g
  • baking powder1 tsp tsp

Step-by-step instructions

    Preheat the oven to 180 °C/160 °C fan/gas 4. Put the dry cereal, sugar, dried fruit and milk into a large bowl, stir, then let sit until the milk is absorbed, at least 1 hour.

    Generously butter a non‑stick 450 g loaf tin or line it with parchment. Add the flour and raising agent to the cereal mixture and gently mix until homogeneous. Spoon the batter into the prepared tin, then bake for 1 hour.

    Turn the loaf onto a rack and let it cool slightly before slicing for serving.
