The delicate aroma of cardamom makes this creamy custard exceptionally special. Pour it over your favorite pudding, serve with a pod of fruit mixture, or enjoy on its own.
Place the cream, milk and cardamom seeds in a saucepan. Heat until steam appears, then remove from heat, cover with a lid and let sit for 20 minutes so the flavors infuse.
Whisk the yolks with the sugar, then add the flour and whisk. Pour in a little warm milk mixture, stirring well, then gradually incorporate the remaining liquid.
Rinse the saucepan, then sieve the milk mixture back in to remove the cardamom pods. Cook over low‑medium heat, stirring constantly for 4‑5 minutes until you obtain a thick custard that coats the back of a spoon. Pour it over your favorite pudding or eat it with a spoon.
