Caerphilly wasoriginally a Welsh cheese, but is now made mostly in the West Country. It is a mild soft cheese. Here it is paired with vine-ripened tomatoes and fresh herbs. Pretty and tasty. From "The Great British Kitchen" published by The British Food Trust.

Ingredients

4 serv.
  • caerphilly cheese6 ounces
  • medium tomatoes4
  • vegetable oil1 tablespoon
  • plain yogurt5 ounces
  • dry mustard1 pinch
  • fresh mixed herbs2 tablespoons

    chopped (try chives, marjoram, parsley)

  • kosher salt
  • fresh ground black pepper
  • fresh herb

    chopped for garnish

Step-by-step instructions

    Slice cheese (do not worry if it crumbles a bit) and tomatoes; arrange on individual plates.

    Whisk together oil, yogurt, mustard, herbs; season with salt and pepper.

    Spoon yogurt dressing over cheese and tomatoes; garnish with additional fresh herbs.
