Step-by-step instructions

    Place the flour, ground cinnamon, baking powder and fine sugar into the bowl of a stand mixer with a dough hook and mix on medium speed. Add the butter and mix until the mixture becomes crumbly. Add the vanilla extract and 120 ml water, and mix again until everything comes together into a dough. Knead the dough for 5 minutes until smooth, then transfer to a bowl, cover with film, and let rest for 15 minutes.

    Divide the dough into 18 pieces. Lightly dust the work surface with flour and roll each piece into a disc about 5 inches in diameter.

    For the filling, mix ground cinnamon and sugar in a small bowl. Heat the oil in a heavy deep pan over medium‑high heat until a small piece of dough sizzles and rises to the surface when dropped. Carefully place one dough disc into the hot oil and use metal tongs to submerge it. Fry for 2‑3 minutes until golden, then transfer to a cooling rack set over a tray to drain excess oil. Sprinkle both sides with the cinnamon‑sugar mixture. Repeat with the remaining dough discs and cinnamon‑sugar mixture, then serve immediately.
