Brown butter, bread and onion sauce

Prepare a fragrant bread sauce that is perfect for a Christmas dinner. The sauce is smooth and thick thanks to butter and whole milk – no cream needed.

Ingredients

6 serv.
  • unsalted butter40g g
  • large onion½

    finely sliced

  • bay leaf1

    (optional)

  • whole milk500ml ml
  • ground nutmeg
  • ground cloves
  • stale bread

    cut into pieces

Step-by-step instructions

    Heat the butter in a pan over medium heat until it begins to sizzle, then continue cooking until it turns a nut‑brown colour. Add the onion and bay leaf, if using, and cook on low heat for 10‑15 minutes until the onion is soft and slightly golden. Add the milk and ground spices, season, and bring to a boil. Remove from heat and let steep for at least 5 minutes. It can be made a day ahead and chilled.

    If desired, remove the bay leaf and add the bread. Bring to a boil, then remove from heat and blend with a hand blender or regular blender until smooth. Return to the pan and simmer over low heat for 2 minutes until the sauce thickens. It can be made a day ahead and chilled, then reheated with a splash of milk. Transfer to a bowl and season with black pepper before serving.
