This luxurious weekend brunch pairs salty bacon with sweet maple‑soaked brioche and banana slices for a special breakfast worth savoring
In a large bowl vigorously whisk the eggs, then add the cream, vanilla and sugar and whisk again.
When ready to cook, preheat the oven to its lowest setting, place a tray inside and pour the creamy mixture into a shallow dish that will allow the brioche to lie flat. Heat a grill or pan over medium heat and melt the butter and oil together.
Place the brioche slices in the creamy mixture for 1 minute, then flip each slice and gently press, allowing them to absorb the liquid for another minute until saturated.
Remove the brioche from the mixture and place it on a hot grill or pan (you may need to cook in batches). Fry a few minutes on each side until the centre is tender and moist (but not soggy). To check, make a small cut in the centre with a knife – the inside should resemble a baked bread pudding. Keep the cooked slices warm in the oven while you finish the rest.
Meanwhile, fry the bacon in a pan for 5 minutes until crisp. Serve the French toast topped with bacon, bananas and drizzled with maple syrup.
