Prepare these tasty brie and cranberry puff pastry parcels to serve as canapés at a Christmas party. (Be sure to choose vegetarian brie for vegetarian guests)
Preheat the oven to 200°C/180°C with convection/gas 6 and line two baking trays with parchment paper. Unfold a sheet of puff pastry on a cutting board, cover the remaining pastry with a damp tea towel to prevent drying. Generously brush the pastry sheet with melted butter, then cut it into three long strips.
In the upper right corner of each pastry strip place ½ tsp cranberry sauce and a piece of brie. Fold the pastry over the filling to form a triangle, then continue rolling the pastry around itself along the length of the strip. Brush with more butter to seal, sprinkle with poppy seeds and place on the prepared tray. Repeat with the remaining ingredients. The parcels can be covered and chilled in the refrigerator for up to a day or frozen for up to three months.
Bake for 15–20 minutes (or 20–25 minutes if frozen) until deep golden‑brown. Let stand for 5 minutes before serving with extra cranberry sauce.
