Use your bananas and turn them into an alcoholic baked caramelised dessert with rum, maple syrup and pecans.

Ingredients

4 serv.
  • bananas6 ripe

    peeled and halved lengthwise

  • dark soft brown sugar2 tbsp tbsp
  • maple syrup2 tbsp tbsp
  • rum3-4 tbsp tbsp

    (or whisky)

  • pecans40g g

    toasted and chopped

  • ice creamvanilla or salted caramel

    vanilla or salted caramel, for serving

Step-by-step instructions

    Preheat the oven to 220 °C/200 °C with convection/gas 8. Toss the banana halves in a heat‑proof dish with sugar, maple syrup and rum or whisky. If desired, sprinkle with a pinch of salt.

    Bake for 15 minutes, then remove from the oven. Heat the grill to high temperature and grill the bananas for 3‑5 minutes, or until bubbles appear and caramelisation occurs. Transfer the bananas to bowls and sprinkle with pecans. Serve with ice cream and drizzle with the remaining caramelised syrup from the dish.
