Place the potatoes on a cutting board and gently mash them with a potato masher – try not to crush them too much, just enough to flatten. Heat the oil in a pan over medium heat and fry the potatoes for 5 minutes on each side, or until hot and crispy. Keep them warm while you reheat the stuffing, 'pigs in a blanket' and turkey in the microwave or in a pan.
Mix the mustard and mayonnaise in a bowl and spread the mixture on one slice of bread (no need to butter if you’re not using sourdough or grain bread). Spread cranberry sauce on the other slice. On the mayonnaise layer, place the pickled red cabbage, crispy potato slices, stuffing, turkey, 'pigs in a blanket' and a handful of spinach. Finally, press the slice with cranberry sauce on top of the sandwich. You can secure it with a toothpick and add another 'pig in a blanket' if you have one left. Serve with a bowl of hot sauce for dipping, if desired.
