Caramelized Rum Bananas on the Grill

Prepare fragrant bananas in caramel with a hint of spiced rum, wrapped in foil and grilled over coals. A perfect sweet‑tart finish for your summer BBQ—quick, easy, and incredibly tasty.

Ingredients

  • unsalted butter50 g

    soft

  • light muscovado brown sugar40 g
  • black molasses1-2 tsp
  • spiced rum1-2 tbsp
  • bananas (with skin)6
  • ice cream

    for serving (prefer coconut)

Step-by-step instructions

    Mix the soft butter, brown sugar and black molasses, then add the spiced rum and stir thoroughly.

    Make a slit along the long side of each banana without cutting all the way through the skin, and place one teaspoon of the mixture into the slit.

    Lay the bananas skin-side up on large sheets of foil, leaving enough space to wrap them tightly.

    Wrap each banana tightly in foil, forming a sealed packet, and place them on the heated coals. Cook for 15 minutes, turning the packets once halfway through to ensure even caramelisation.

    When the bananas are soft, sticky and golden‑caramelised, remove them, unwrap and serve immediately with a scoop of ice cream.
