  • wheat flour350g g
  • golden fine sugar85g g
  • light muscovado sugar85g g
  • baking powder tbsp
  • zest of 2 lemons

    or small oranges

  • eggs2
  • sour cream (packet)284ml ml
  • vanilla extract tsp
  • butter100g g

    melted

Step-by-step instructions

    Preheat the oven to 200 °C (convection 180 °C, gas 6). Line a 12‑cup muffin tin with paper liners.

    In a large bowl, combine the flour, golden sugar, light muscovado sugar, baking powder and lemon zest (or orange zest).

    In a separate bowl, whisk the eggs, add the sour cream, vanilla extract and melted butter, mix until smooth.

    Pour the liquid mixture into the dry ingredients, stir quickly with a spatula just until the dry and wet parts combine.

    Divide the batter evenly among the liners.

  6. 6

    Bake for 25 minutes. Let the cupcakes cool in the tin for 5 minutes, then remove them and let cool completely on a rack.
