Sweet, fragrant cupcakes created by Gary Rhodes, Angela Hartnett, Einsley Harrington and Anjum Anand – a perfect way to lift spirits and support the Children in Need charity. Make them together and colour each cupcake with kindness.

Ingredients

12 serv.
  • plain flour350 g
  • golden fine sugar85 g
  • light muscovado sugar85 g
  • baking powder1 tbsp
  • zest of 2 lemons

    or small oranges

  • eggs2
  • sour cream (packet)284 ml
  • vanilla extract1 tsp
  • butter100 g

    melted

Step-by-step instructions

    Preheat the oven to 200 °C (convection 180 °C, gas 6). Place 12 paper muffin cups in a muffin tin. In a large bowl, combine the flour, golden sugar, light muscovado sugar, baking powder and the zest of two lemons (or small oranges). In a separate bowl, whisk the eggs, add the sour cream, vanilla extract and melted butter, mix. Pour the liquid mixture into the dry ingredients and quickly combine with a spatula, without over‑mixing. Divide the batter evenly among the cups.

    Bake for 25 minutes. After baking, leave the cupcakes in the tin for another 5 minutes, then carefully remove them and let cool completely on a rack.
