Easy and quick to get a tender, crumbly dough that makes a perfect base for pies, tarts and cookies. The main secret – cold butter and minimal effort.

Ingredients

  • wheat flour250г г
  • butter125г г

    cut into cubes, chilled in the refrigerator

  • milk1‑3 ст. л. ст. л.

    or water

  • pinch of salt

Step-by-step instructions

    Sift the flour into a large bowl. Add the cubes of cold butter and rub them together with your fingers until the mixture resembles fine crumbs; if using a food processor, pulse it. Add a pinch of salt and mix again.

    Gradually pour in the liquid – first 1 tablespoon of milk or water, then more little by little, until the dough comes together into a homogeneous mass.

    Place the dough on a flour‑dusted surface and quickly, without stretching, bring it together with your hands, forming a disc about 2 cm thick.

    Wrap the disc in film, refrigerate for at least 20 minutes, then use as needed.
