Easily cook a fragrant curry sauce that serves as a perfect base for any dish—from vegetable ragout to quick chicken curry. Try it and your meals will gain a bright Eastern flavor!
Heat 3 tbsp of vegetable oil in a large deep skillet. Add the 500 g of finely chopped onion and sauté for 10 minutes until soft and translucent.
Add the 6 peeled and chopped garlic cloves and the finely chopped large ginger root, sauté for another 2 minutes, stirring constantly so the garlic does not burn.
Stir in 2 tbsp of Madras curry paste and cook, stirring constantly, for 1 minute to release the aromas.
Pour in 1 l of cold water, add the 400 g of canned crushed tomatoes and 1 tsp of salt. Mix well and bring to a boil.
Reduce heat to medium and simmer the sauce for about 10 minutes until the liquid volume reduces threefold and the sauce thickens.
Remove the pan from the heat, cool and store in the refrigerator for up to 1 week or freeze for up to 2 months.
