Bake a batch of fragrant cookies with just five ingredients – the perfect companion to a cup of tea. It can be made in minutes and always delights with its taste.
Preheat the oven to 190 °C (170 °C with convection) or set gas mark 5. In a large bowl, beat the softened butter with a wooden spoon or mixer until creamy. Add the sugar and beat until the mixture becomes light and fluffy. Sift the flour, add ground cinnamon (or other spices if desired) and, if desired, chocolate chips. Knead the dough, mixing in a figure‑eight motion until you obtain a uniform mass. The dough can be frozen immediately.
Shape the dough into walnut‑sized balls, place them on a baking sheet leaving a little space (no butter or parchment needed). Gently flatten each ball with the palm and bake for 10–12 minutes until they turn golden‑brown and firm slightly on top. Transfer the cookies to a rack and let cool for 15 minutes before serving.
