Treat the family to fragrant grilled banana splits with caramel – easy to make, and their taste will make you want more. Serve with vanilla ice cream for an outdoor party.
Mix the soft butter, sugar and vanilla extract. Carefully slit each banana lengthwise without cutting all the way through. Spread a tablespoon of the butter mixture onto each slit side, then place the bananas skin‑side up on separate sheets of foil large enough to wrap them completely. Seal the edges of the foil, forming packets. The packets can be prepared in advance and kept in the refrigerator until you are ready to cook.
Preheat the grill to low temperature until the coals turn gray. Place the packets on the grate and cook for 15 minutes, turning them once.
Carefully unwrap the packets, keeping all the sauce inside. Transfer the bananas to plates, sprinkle with chopped pecans and drizzle with the remaining sauce. Serve with a portion of ice cream, whipped cream or yogurt.
