Bang Bang salmon! Creamy, sweet, spicy with a “bang”. Served with steamed rice and avocado cucumber salsa. Perfect for a weekday evening!

I love a small avocado cucumber salsa, see notes below!
Prepare the salmon: Preheat the oven to 400°F. Optionally cut the salmon into individual portions. Pat the salmon dry with a paper towel. Coat the salmon in the spice mixture. Place the salmon on a parchment‑lined baking sheet.
Make the Bang Bang sauce: In a small bowl combine mayonnaise, sweet chili sauce, garlic and soy sauce. Set aside half of the sauce for after baking.
Bake the salmon: Spoon a small amount of sauce onto the seasoned salmon pieces. Bake for 10 minutes on the top rack. Then turn on the broiler for another 2‑3 minutes until the salmon turns golden‑brown and the top caramelizes.
Serve: Place the salmon over the rice, add vegetables to taste and the reserved Bang Bang sauce, topped with crispy chili. Simple and delicious.
