A moist banana loaf with walnuts and chocolate chips – perfect for a quick snack or breakfast.
Preheat the oven to 190 °C (170 °C with convection) or gas mark 5. Line a loaf pan (weighing 900 g / 2 lb) with parchment paper.
In a large bowl mash the ripe bananas with the sugar using the back of a fork.
Add the eggs and whisk with an electric beater until smooth, then fold in the soft butter and mix for a few more minutes until the batter is glossy.
Sift the flour together with the baking powder and gently combine with a spatula, then add the chopped walnuts and chocolate chips.
For the final mix, pour the batter into the prepared pan.
Bake for 1 hour 5 minutes or until a skewer inserted in the centre comes out clean of wet crumbs.
Allow the loaf to cool slightly in the pan, then remove it and slice into thick pieces — warm or at room temperature. Store any leftover loaf in an airtight container for up to 3 days.
