Got overripe bananas? These soft, fragrant cookies are the perfect way to use them up and spend time with the kids. Quick, simple and incredibly tasty!

Ingredients

  • salted butter75g g
  • light brown sugar (muscovado)100g g
  • egg1 середнє

  • all-purpose flour250g g
  • baking soda½ ч. л. tsp
  • ground cinnamon1½ ч. л. tsp
  • raisins50g g

    optional – chocolate chips or pecan nuts

Step-by-step instructions

    Preheat the oven to 190 °C (170 °C with convection, gas 5) and line two sheets with parchment paper.

    In a small saucepan melt the butter on the stove or in the microwave (30 seconds on high power until melted). If melted on the stove, transfer the butter to a mixing bowl.

    Add the sugar with a wooden spoon, stir, then beat in the egg and whisk until smooth. Add the grated banana and mix again.

    Sift the flour, baking soda, ground cinnamon and a pinch of salt, then fold the dry ingredients into the banana mixture until a soft dough forms.

    Add the raisins, chocolate chips or nuts if desired and mix thoroughly so the ingredients are evenly distributed.

    Using a teaspoon, drop small portions of dough onto the prepared sheets, leaving space between them – the cookies will spread while baking. You’ll get about 24 pieces.

    Bake for 10–12 minutes until the edges turn light brown and the surface feels dry to the touch.

    Leave the cookies on the sheet for a few more minutes, then transfer them to a cooling rack and let them cool completely.

    Store in an airtight container for up to three days.
