A light, nutritious dinner ready quickly even on a weekday. Baked sweet potatoes with rich beans – an ideal flavor and health combo, leftovers can be frozen for next time.
Preheat the oven to 200 °C (180 °C convection or gas 6). Prick the sweet potatoes with a fork a few times, then microwave on high power for 8 minutes until soft. Rub them with 1 tbsp smoked paprika, 1 tbsp olive oil and a pinch of spices. Place on a tray and bake for 10–15 minutes until a crisp crust forms.
While the sweet potatoes bake, prepare the beans. In a skillet, using the leftover oil, sauté the chopped onion until soft. Add minced garlic, brown sugar, red wine vinegar, Worcestershire sauce and the remaining paprika, cooking another 1–2 minutes until the mixture thickens. Add the beans, chopped tomatoes and a splash of water, bring to a boil and simmer until the sweet potatoes are done.
Place the cooked sweet potatoes on plates, drizzle with the bean mixture, add a spoon of light sour cream and a pinch of paprika to taste.
