Baked Ham with Mustard-Brown Sugar Glaze

Juicy ham baked to a golden crust, covered with an aromatic mustard-brown sugar glaze. Serve it hot or cold — perfect for slicing into thick slices.

Step-by-step instructions

    Place the raw ham piece in a large clean container. Add enough water to fully cover it and let it soak overnight (or for 12–24 hours), changing the water twice.

    Preheat the oven to 180 °C (160 °C with convection, gas 4). Drain the water, transfer the ham to a large roasting pan, tightly cover with foil and bake for 3 hours.

    Remove the ham, increase the temperature to 200 °C (180 °C with convection, gas 6). Using a sharp knife carefully remove the skin, leaving 1–2 cm of fat, and cut a diamond pattern into it. In a small bowl mix the brown sugar and mustard, then rub the mixture over the entire surface of the ham. Bake for another 30 minutes until the meat is tender and the crust is sticky and golden.

    Place the cooked ham on a large platter lined with bay leaves. Slice into 1 cm thick slices and serve with rye bread, sweet pickled cucumbers, and mustard sauce (recipe below).
