This apricot chicken, cooked on a sheet pan, is extremely simple and TASTY! Just a few simple ingredients, minimal cleanup, and a powerful flavor boost from the charred green onion on top.

Preheat: Heat the oven to 450 °F (230 °C). Position the rack in the upper third of the oven.
Green onion preparation: Cut the green onion in half lengthwise.
Chicken preparation: Slice the chicken into thinner horizontal pieces. Place the chicken on a sheet pan; season with salt and pepper. Drizzle sesame oil and low‑sodium soy sauce directly over the chicken.
Add the onion: Toss the onion with some of the oil.
Bake: Place the onion on top of the chicken. Bake for 6 minutes on the rack positioned in the upper third of the oven.
Grill: Turn on the broiler; grill for 1‑2 minutes – aiming to finish the chicken (165 °F / 74 °C) and lightly char the onion. These charred pieces add great flavor! Immediately spoon apricot jam and crunchy chili sauce over each piece so they melt slightly.
Serving: Serve the chicken with a bunch of charred green onion and rice, drizzling the extra pan juices (or simply additional sesame oil and soy sauce). A modest method, maximum flavor!
