Fluffy, aromatic pancakes with blueberries, served in a tall stack with maple syrup – a perfect breakfast.
In a large bowl combine 200 g flour, 1 tsp baking powder and a pinch of salt.
Whisk 1 egg with 300 ml milk, make a well in the center of the dry ingredients and pour in the milk mixture, stirring quickly to form a thick, homogeneous batter.
Add the melted butter (about a piece) and mix quickly, then gently fold in half of the 150 g blueberries.
In a large non‑stick skillet heat 1 tsp sunflower oil or a small piece of butter.
Drop batter onto the skillet by the large tablespoon — each pancake about 7.5 cm in diameter. Cook 3‑4 pancakes at a time.
Fry over medium heat for about 3 minutes until small bubbles appear on the surface, then carefully flip and fry another 2‑3 minutes until the pancakes turn golden.
Transfer the cooked pancakes to a paper towel to keep them warm while you finish the remaining batter.
Serve with maple syrup and the remaining blueberries.
