Ingredients

  • 2 lbs marlin or 2 lbs fish, of your choice cut in thin strips2 2
  • large onion, chopped1 1
  • slices ripe pineapple, diced3 3
  • salt & pepper
  • For the sauce
  • achiote1⁄2 1⁄2
  • cup lime juice1⁄2 1⁄2
  • tablespoon prepared mustard1 1
  • cup cooking oil1⁄2 1⁄2
  • cup vinegar1⁄4 1⁄4
  • medium tortillas30 30
  • For garnishes
  • chopped cilantro
  • chopped onion
  • quartered lime

Step-by-step instructions

    Preheat oven to 175°C (convert to Fahrenheit).

    In a baking dish, place the fish strips, adding the onion, pineapple, salt and pepper.

    Combine dressing ingredients and pour over fish strips.

  4. 4

    Bake in oven until fish is cooked and sauce has thickened-- approx.

    30 min.

    Make tacos with the tortillas and garnish with cilantro and onion.

  7. 7

    Sprinle a bit of lime juice over taco filling.
