Scotch eggs in air fryer: crispy British snack

Crispy scotch eggs cooked in an air fryer become the star of your picnic – serve them with hot mustard for extra flavor.

Ingredients

    (approximately 350 g), skin removed

  • unsmoked bacon6 смужок

  • sage leaves8

    finely chopped, or 2 tsp dried sage

  • dried mixed herbs1 ч. л. tsp

  • mustard

Step-by-step instructions

    Preheat the air fryer to 180 °C. Place four eggs in the basket and cook for 8 min. Then remove them, plunge into ice water to cool quickly, and peel. Fresh eggs peel more easily, but it’s okay if a little white sticks during peeling.

    In a large bowl pour the meat mince (from the sausage), add the finely chopped bacon, sage leaves and dried herbs, then mix thoroughly with your hands. Divide the mixture into four portions, shape balls, then flatten each into a disc about 10 cm in diameter. The easiest way is to do this on a sheet of parchment paper so the meat doesn’t stick. Set aside.

    On one plate sprinkle flour, in a bowl beat the remaining egg, and on another plate place the panko crumbs. Each boiled egg is first rolled in flour, then placed in the centre of a meat disc and wrapped with meat. Roll again in flour, dip in beaten egg, then in panko crumbs to achieve an even coating. Set the ready scotch eggs aside.

    Reheat the air fryer to 200 °C. Spray the scotch eggs with butter spray, place them in the basket and cook for 20 min until they develop a golden crust and the meat inside is cooked through. They can be stored in the fridge for up to three days. Serve with mustard to taste.
