Remove the meat from the refrigerator 20–30 minutes before cooking, pat the skin dry with a paper towel. Using a sharp knife, make diamond-shaped cuts in the skin without cutting into the meat. Rub the skin with oil and season generously with salt.
Place the piece in the air fryer basket, set to 210 °C and cook for 20 minutes. Then lower the temperature to 160 °C and continue roasting for 40–50 minutes (for 1 kg) or 1 hour–1 hour 10 minutes (for 1.5 kg). Check that the juices run clear and that the internal temperature of the meat reaches 70 °C (using a digital thermometer).
The crust should be crispy. If it is not crispy enough, remove the skin, cover the meat and let it rest for 20 minutes while you separately crisp the skin at 220 °C for 15–20 minutes. If the crust is perfect, let the meat rest uncovered for 10–20 minutes. Slice and serve with apple sauce if desired.
