  • fine sugar40 g
  • vanilla extract1 tsp
  • egg1
  • all‑purpose flour150 g
  • baking soda¼ tsp
  • chocolate chips100 g
  • vanilla ice cream4 servings

Step-by-step instructions

    Preheat the air fryer to 160 °C. In a large bowl, beat the butter with both sugars until a light, creamy mixture forms. Add the vanilla extract and egg, mix, then fold in the flour, baking soda and a pinch of salt until a smooth dough forms. Stir in the chocolate chips gently.

    Line the air‑fryer basket with foil (this helps the bottom of the cookies bake evenly) or use a pan that fits your appliance. Divide the dough into 8 balls, place them in the prepared basket leaving space between them (you may need to bake in batches). Bake for 12–15 minutes until golden. Check that the bottom of the cookies is crisp, then let them cool completely.

    Place a scoop of vanilla ice cream between two cookies, forming four ice‑cream sandwiches. Store the finished sandwiches in an airtight container for up to three days.
