Use an air fryer to get golden, crispy fish fingers in minutes. Serve them in a sandwich with lettuce leaves and tartar sauce – a homemade fish‑finger sandwich like no other.
Preheat the air fryer to 180 °C. Cut the white fish fillet into strips about 3‑4 cm thick (the size of a classic fish finger) – you’ll get about 6‑8 pieces. In a shallow bowl whisk the egg. On another shallow plate or in a bowl place the panko breadcrumbs and season them to taste.
Dip each piece of fish in the beaten egg, letting excess drip off, then coat in the panko breadcrumbs. Place the ready fingers on a plate and continue with the rest.
Transfer the fingers to the air‑fryer basket in a single layer and cook for 8‑10 minutes, until they become golden and crispy.
For the sandwich, spread butter on two slices of white bread, then on one slice spread a generous layer of tartar sauce or tomato ketchup. Place 3‑4 fingers, add a few Little Gem lettuce leaves and top with the second slice.
