    (with clementine, if possible)

  • Triple Sec1 ст. л. ст. л.

  • chili flakes

    to taste

  • vegetable oil2 ч. л. ч. л.
  • halloumi2 × 250 г упаковки г
  • sweet chili sauce

or mayo with sriracha, for serving

Step-by-step instructions

  1. 1

In a large bowl combine the clementine zest and juice, marmalade, triple sec, chili flakes, vegetable oil, a pinch of salt and freshly ground black pepper. Mix until homogeneous and set the marinade aside.

  2. 2

Slice each block of halloumi along its natural grain, then cut each half into cubes about ≈ 1 cm (approximately 32 cubes). Transfer the cubes to the bowl with the marinade, gently toss to coat the cheese, cover and refrigerate for at least 3 hours, preferably overnight.

  3. 3

Remove the cubes from the marinade, pat dry with a paper towel and thread three cubes onto a miniature metal skewer. If preparing ahead, the skewers can be frozen in an airtight container for up to three months.

  4. 4

Preheat the air fryer to 200 °C. Arrange the skewers in a single layer and fry for 6–8 minutes, turning halfway through, until they turn golden. If the skewers are frozen, cook first 5 minutes at 180 °C, then another 4–6 minutes at 200 °C. Serve hot with the chosen sauce.
