15-Minute Meal Prep: Sesame Noodle Bowls

Prepare sesame noodle bowls for Meal Prep! Spiral noodles, a light creamy sesame sauce, perfectly browned chicken meat and all the vegetables. DELICIOUS.

Ingredients

  • sesame paste (or tahini)0.25 cup
  • warm water0.25 cup
  • soy sauce3 tablespoon
  • sesame oil1 tablespoon
  • rice vinegar1 tablespoon
  • garlic, grated (1 clove)1
  • salt and sugar to taste
  • stir‑fry noodles, Chinese egg noodles or linguine if needed6 ounce
  • edamame, cooked2 cup
  • cucumbers, diced2
  • chicken breast, cooked and diced (optional: see notes)1 lb
  • sesame seeds

Step-by-step instructions

    Sauce: Whisk all sauce ingredients until smooth (or blend them in a blender, or shake in a jar).

    Noodles: Cook the noodles a few minutes SHORTER than the package instructions. If the noodles are very sticky, rinse them with cold water. Toss the noodles with about half of the sesame sauce.

    Bowls: Distribute the noodles, edamame, cucumber and chicken into containers. Drizzle a little extra sauce and sprinkle with sesame seeds. Done! Store in the refrigerator for 3‑4 days. Serve hot or cold. Take a photo for Instagram, because this is your moment.
